An open letter to the chicken.

Chicken. Oh, chicken,

How I love thee. I could eat you morning, noon and night. You know why? Because you’re so versatile and yummy and when cooked perfectly, you taste like butter. Also you’re one of a handful of things my picky two-year-old will eat without coercion. You are always welcome in my home even though, if we are being honest, you are always there anyway. Thank you for being you, chicken.

Chicken is incredible. You can marinate it, season it, baste it, batter it, go naked or just salt & pepper it  and then  grill it, roast it, bake it, fry it, pop it in a rotisserie, pan fry it, smoke it, plop it in a soup, boil it, braise it, barbecue it…I just started to feel like Bubba in Forrest Gump talking about all of the ways to cook shrimp. Seriously though. You can’t beat chicken with a stick. It’s the perfect thing to serve for breakfast, brunch, lunch or dinner. I’ve picked out a few recipes for you to try at each meal for either yourself or to impress a few people. If you served them all the same day, I promise you wouldn’t even feel like you had chicken each time.

I would like to meet the person who was all like, ” I’m hungry. Let’s see what I have in my kitchen. Hmmmm. I’ve got chicken. I’ve got waffles. Yes. I’m gonna put them together.” Honestly, if you’ve never tried it because it sounds totally wonky, you are missing out. There are a lot of great restaurants out there that serve chicken and waffles if you don’t feel like making them. We are lucky enough to have the BEST place in the world in Raleigh to get Chicken and Waffles. It’s called Beasley’s Chicken + Honey. My mouth just started to water.

For those who would like to get in touch with your inner gourmet chef, below is a super posh recipe from Food & Wine. It takes chicken and waffles to the next level. You’ve got homemade, fluffy cheddar-beer waffles, fried chicken with Sriracha sauce and in between them is a layer of bacon. And we all know how everyone feels about bacon. Pause for a thought. Let it be known that I can have truly epic thoughts at times. What if you subbed the bacon with cooked cheese? Yes. COOKED. CHEESE. If you can’t wrap your head around what that is, just think of those bits of cheese that may fall off when making a grilled cheese sandwich. You know the cheese that hits the pan and gets crispy? Just a thought. A nifty, yummy thought. But see what I mean about this recipe?! Posh. This will surely send your taste buds into a state of utter bliss and impress any person you make it for.

Who doesn’t love a good salad? Salad is one of the greatest foods ever. You can literally come up with thousands of combinations. One of my favorite  is a cobb salad because the toppings are just plain harmonious. I am all about a nice crunch alongside something with a softer texture.  Cobb salads have bacon crumbles (there goes the bacon again…I’m sensing a theme), hard boiled eggs, avocado, bleu cheese crumbles, tomato and of course chicken. This rockstar take on a cobb salad is sure to please anyone who loves this salad and loves a yummy sandwich. All hail Martha Stewart.

Pizza doesn’t always have to be delivered or be store-bought. You can make a pizza at home in a jiff and the best part is that you get to select the quality of your ingredients. Making homemade pizza is not only a kid-friendly activity but it is also a fun indoor date night idea. The recipe below is a scrumptious Food Network recipe that I added fresh mozzarella to, just to jazz it up. You can always stick to the recipe and omit the cheese if you’d like. This is of course, your pizza.
